Hernandez Bakery off of Oak St. has been in business for over twelve years. The popular Abilene eatery offers a variety of Latin dishes and pastries. But two months ago, the place was shut down.
"I'm not gonna lie, there has been some health code violations," says Lourdes Huerta, a current employee.
Twelve health code violations, to be exact. Inspectors noticed everything from employees preparing food bare-handed to potentially hazardous food temperatures. The owner says she is extremely strict with her employees and the reasons for the violations were properly addressed.
Huerta says, "We are doing everything. We got new equipment, new personnel."
This however, wasn't the first time the eatery was warned. According to records, there was a history of issues. However, the restaurant claims after two days, it was back up and running.
"It may take 1, 2, 3, 4 visits until all of the critical items have been taken care of," says Glenn Bailey, Abilene's Envrionmental Health Manager.
A restaurant is inspected up to four times a year, less depending upon the risk the facility has to the community. The risk factor is also considered when Envrionmental Health officials decide to shut down a place.
"Thank god the health department gave us a go and we're trying, trying our best to keep it like that," says Huerta.
