"We describe it as a funky New Orleans Bistro," says owner and Sue Chef, Joel Trueblood.
Bonterra Blu's menu combines a few Texas favorites with the spice and style of the Cajun haven, New Orleans, to create a style he likes to call "New Texas" cuisine.
"It has a lot of different variations on the theme," he explains. "There's an Asian influence, a focus on fresh seafood..."
And the list goes on! Bonterra Blu's menu is a melting pot of different cultures and influences, but the one thing you wont find on the list are a large variety of steaks.
"We're not a steakhouse," says Trueblood, "we never intended to be a steak house. We have one steak on the menu."
Trueblood says the most popular item on the menu, surprisingly, are the calamari appetizer and their grass-fed, New Zealand lamb.
"It's good foods, big portions, that has been our biggest complaint."
For drinks, the restaurant boasts a B-Y-O-B theme, where customers can bring in their own types of alcoholic beverages.
Apart from the food, Bonterra Blu is also well known for their unique atmosphere, with art work that cycles every few months and live music on Thursday nights.
"When people come in here they just go 'wow,' there's something unique about this place," explains Trueblood. "There's nothing like it around."
