Give Your Diet A Boost Of "Green" This March

Usually when you think of green food, kids go running from the dinner table, but our Culinary Expert, Chef Darlene brought some great tasting and healthy "green" recipes for March.

"You think about March and it's green!" says Chef Darlene, "you start seeing the green grass, you think of vegetables and gardens coming up..."

Chef Darlene, along with Natural Grocers brought in a few examples of healthy green options to include in your daily diet.

From cucumbers, to pears, kiwis, and more, there are tons of healthy and delicious options available for a green balanced diet.

"You have, of course, your good old cucumber," explains Chef Darlene, "they're not just for your eyes, to take the puff out, they're good for you."

According to Chef Darlene, cucumbers also serve as a good dietetic.

Her top choice for green veggies this March, is zucchini, which can be prepared in a multitude of ways.

"I grate it up and put it in cakes and make muffins," says Chef Darlene. "You can just put it in like a salad with olive oil over it, or just eat it raw."

If you're a potato chip lover, Chef Darlene says you can also turn slices of zucchini into thin, crispy chips. All you have to do is cut a portion of thin slices, toss them with oil and whatever spices you want, and bake for two hours on low.
