Chef Darlene's Recipe for Avocado-Yogurt With Cumin

AVOCADO-YOGURT DIP WITH CUMIN
(From the Dinner Tonight cookbook)
It's not only lighter in calories and fat...It's bursting with the "Fresh Flavor" and I promise your family and friends will not know that you are using "Fat-Free Yogurt" I like to add more cilantro and jalapeno pepper! I encourage you not to leave out the cumin! Cumin gives the dip an extra smoke and warming taste! So get busy impressing your friends and family! Please, take time to pray for our service men and woman this "Memorial Day"
INGREDIENTS:
(Just remember when preparing ingredients for dip ... will be put in a blender/ food processor.) Easy!!!!
cup plain fat-free Yogurt
cup red Onion, chopped
3 Tablespoons fresh Cilantro, chopped
1 Tablespoons Jalapeno pepper, seeded and chopped
2 Tablespoons fresh Lime juice
1 Tablespoon ground Cumin
teaspoon salt
3 ripe peeled avocados, seeded and quarter
1 garlic clove
INSTRUCTIONS:
-Place all ingredients in a food processor or blender, and process until smooth.
-Place in serving bowl. Scoop this creamy dip with pita chips and carrots, celery, red bell pepper and jicama sticks.
-Prepare up to eight hours in advance, and refrigerate in airtight container. (Or at least a 1 hr. just to allow the flavors to marinate and to allow the yogurt to firm with being chilled.)
