Chef Darlene shares her favorite summer time treats just in time to celebrate Independence Day.

Here are some of my favorite "Summertime Recipes"
Cucumber Salads are great
quick and easy throw together side dishes! So, refreshing to eat on a
hot summer day, and to help not waste any cucumbers from the garden too!
For the health benefits cucumbers provides us
with a unique combination of nutrients. These three types of
phytonutrients found in cucumbers provide us with valuable antioxidant,
anti-inflammatory, and anti-cancer benefits. Yeah!!
OLD FASHIONED CUCUMBER SALAD
This is a salad that will bring back many "Summertime Memories" Enjoy!!
4 Cucumbers, thinly sliced
2 Tablespoons Salt
c. White Vinegar
3 Tablespoons Sugar
1 medium Onion, thinly sliced
Pepper to taste
Peel and slice cucumbers. Place in bowl (NOT metal) Add salt and mix well. Refrigerate for about 2 hrs. Rinse cucumbers in cold
water and drain. Mix vinegar, sugar and pepper. Pour over cucumbers and onions slices. Chill for several hours
CUCUMBER YOGURT
SALAD
5 c. thinly sliced Cucumbers
3/4 c. thinly sliced Purple Onion
1 small carton plain low fat Yogurt
3 Tbsp. Apple Cider Vinegar
1 Tbsp. Lemon juice Mix yogurt, lemon juice and vinegar together.
Pour over cucumber and onions. Toss. Let chill.
Will last several days in the refrigerator
