They're one of the most famous restaurants in the Big Country and now there are a few changes on the horizon for Bonterra Blu.

Chef Joel Trueblood explains, "We did shut down the restaurant to the general public. It still is a private event center. We still do cooking classes there and so we still own a beautiful building in Clyde, Texas so it is available at any time."

When it comes to his food truck he adds, "We have a has a great response. It's very trendy and we kind of got in on the ground floor. We are kind of setting the tone so that anyone who follows us will have to step up to that level."
