Dinner Tonight: Roasted Brussels Sprouts with Apples

Ingredients:
cup fresh apples, chopped
8 ounces fresh Brussels sprouts, trimmed and quartered
2 tablespoons apple cider juice
2 teaspoons extra virgin olive oil
1 teaspoon fresh thyme, minced
(Can substitute teaspoon dried)
teaspoon table salt
teaspoon black pepper
Instructions:
Preheat oven to 375 F. Combine apples and Brussels sprouts in an 11 x 17 inch baking dish. Add apple cider, olive oil, minced fresh thyme, salt and black pepper. Toss well. Bake for 25 minutes or until sprouts are tender.
